Snack Wrap (or breakfast)


  • 1 Whole Wheat Tortilla
  • 2-3 strawberries
  • 1/2 banana
  • Peanut Butter
  • Organic Granola
Spread peanut butter (to your liking) in the middle of the tortilla.  Slice banana and strawberries thinly on top of peanut butter.  Sprinkle granola and then roll the tortilla tight.  This makes for a great snack or breakfast on the go.



Lemon Chicken
  • 1/3 C lemon juice
  • 2 cloves garlic (or minced garlic equivalent)
  • 2 tsp. thyme
  • 1 tsp. rosemary
  • 1 tsp. salt
  • 1 tsp pepper
  • 2-4 lbs. chicken breast
Combine in a large zip loc bag to marinate.  A minimum of 2 hours.  We left it in the fridge marinating while at work.

Then we cooked it on the grill with a little bit of melted butter until golden brown.  Enjoy!

Note:  Some like to add lemon zest to the marinate.  Also, you can cook in the over at 425 degree for about 55 minutes.  Cooking on the grill is much faster, and after marinating all day, has the same great flavor.

Homemade Chicken Nuggets
  • 1 lb. boneless skinless chicken breasts
  • 1 egg
  • 1 cup whole-wheat breadcrumbs
  • 1/4 cup parmesan cheese
  • 1/2 tspn garlic powder
  • 1/2 tspn paprika
  • salt & pepper
  • Olive Oil (or any other cooking oil you like)
First, cut up the chicken into little nugget shapes, or tenders.

Second, have one bowl with an egg (beaten) and then a second bowl with all the ingredients mixed in.

Dip the nuggets in the egg (bowl 1), then coat with all the mixes (bowl 2), then put on pan on the stove.  Make sure there's plenty of oil in the pan to keep chicken cookin'.  Flip nuggets and cook throughly.

You can use the same coating for zucchini chips.  I slice them thin, coat and cook.  They're AMAZING!  Do this first before you put raw chicken in the mixture.


Yogurt & Granola Breakfast


  • Individual cup of Stonyfield Organic french vanilla yogurt (or about 1.5 cups)
  • 1 Nature Valley Oats & Honey granola bar
  • 4 strawberries diced
Mix & enjoy!




Pasta & Hamburger
  • 2 Small Handfuls Macaroni Noodles
  • 1/2 a Small Can of Hunt's Tomato Sauce
  • Hamburger
  • Salt
  • Garlic Powder

Directions:  Cook the hamburger meat to your liking and chop up into little fine pieces.  Boil water and cook pasta.  After the pasta & meat are done add both to a hot pot with the tomato sauce.  Stir and sprinkle a little bit of salt and garlic powder to your liking.

Serve hot and enjoy!


Almond Butter Cookies
Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1/2 cup creamy almond butter
  • 1 teaspoons vanilla extract
  • 1/2 cup (packed) golden brown sugar
  • 1/2 cup sugar
  • 1 large egg
Directions:
Preheat oven to 350°F. Mix flour, baking powder and salt in medium bowl. Using electric mixer, beat butter, almond butter and vanilla in large bowl until well blended. Beat in both sugars. Scrape down the sides of bowl and stir in half of the dry ingredients. Add the egg and stir well. Mix in the remaining dry ingredients.
For each cookie, roll 1 heaping tablespoonful of dough into a ball and arrange on the baking sheet about 2 inches apart to allow room for spreading. Using the back of a fork, flatten the balls and form crosshatch design on the tops. Bake cookies until dry on top and golden brown on bottom, about 14 minutes. Cool the cookies on the baking sheet for 5 minutes before removing. Using a metal spatula, transfer the cookies to racks and cool completely.
